Clean Out the Fridge Easy Crustless Quiche Recipe
Quiche may sound fancy, but it’s a great throw together dish for a weekend breakfast or brunch. That’s exactly what I did last Saturday when I cleaned out the fridge. Though some people love that flakey dough, I actually prefer a crustless quiche. For mine, I used fresh spinach, feta, Canadian bacon and Mexican cheese. How’s that for a multi-cultural?
It’s too easy to make your own version with various veggies, meats and cheese. Just remember the more veggies use the more watery your quiche will turn out. Cook your yummy quiche long enough to let the eggs set in the middle and get that cheese browned on the top. Enjoy!

Easy to whip together and ready in an hour, clean out your fridge with veggies, cheese and eggs for a savory crustless quiche.
Ingredients
- Olive oil cooking spray
- 2 large handfuls fresh spinach
- 1/4 cup crumbled feta
- 12 slices of Canadian bacon
- 6 eggs
- 1 cup milk
- 1 tbsp minced garlic
- 1 cup shredded cheese
Instructions
- Pre-heat oven to 350
- Spray glass dish (square 8×8 or pie sized) with cooking spray
- Layer the bottom of the dish with fresh spinach
- Sprinkle feta on spinach
- Add a layer of Canadian bacon
- Break eggs into a bowl with milk and garlic and whisk
- Pour mixture over dish contents
- Sprinkle shredded cheese over the top
- Place in oven for 45 min to 1 hour or until eggs are completely set and cheese is golden brown
