A delish and easy Greek inpired slow cooker recipe for the Dutch oven. For a crockpot version of the recipe below, brown chicken and deglaze in a skillet before adding all ingredients to a crockpot and cook on low.
Ingredients
- 2 chicken breasts
- 2T avocado oil
- 1/4 cup bourbon
- 2T Greek seasoning
- salt
- 1 can diced tomatoes
- 1 can chickpeas
- 1 can black beans
- 6 cloves garlic
- 3T dried onion
- 1-2 cups chicken stock
- 1/4 cup kalamata olives
- 1/4 cup crumbled feta
- sour cream
Instructions
- Preheat oven to 225
- Cut chicken into 1/2-inch sized cubes
- Season with salt and 1T Greek seasoning
- Heat oil in Dutch oven until rippling hot
- Brown chicken (in batches if using a small pot) and deglaze with bourbon
- Scrape up brown bits and remove from heat
- Add chickpeas and black beans to a colander and rinse
- Run garlic through a press and add to the pot along with tomatoes, beans, peas, dried onion and remaining seasoning
- Pour in chicken stock to desired consistency
- Cover and place in oven to cook for 4+ hours
- Plate in shallow bowls and top with kalamata olives, feta and a dollop of sour cream if desired
